Mad Mex is an American restaurant chain. It was founded in 1989 by Rick and Elise Wetzel. Rick Wetzel, together with his brother-in-law, opened the first Mad Mex restaurant in Denver, Colorado. The first franchised restaurant opened in 1991, in Colorado Springs. Today, you can find Mad Mex restaurants in 17 states across the US. Mad Mex specializes in Mexican cuisine, and has a wide range of dishes on the menu, from grilled fajitas and burritos to quesadillas and salads.
